Why do green peppers cause indigestion?



Why do green bell peppers even exist?  Green bell peppers are cheaper and more common in restaurants than other bell peppers.  How many times have you ordered Chinese and been left with a pile of uneaten green bell peppers in each dish?  Green bell peppers are bitter and hard to choke down.  If you are sensitive to unripe fruit and produce, you might want to steer clear of green bell peppers for better digestion.  


All green peppers, not just bells, are simply unripe red, yellow, orange, etc.  peppers.  Ripe peppers even have more vitamins and antioxidants than green.   If you buy green bells and they are more mature, they can possibly ripen and turn color on your countertop.  The sweetest are fruit allowed to ripen fully on the plant in full sunshine, while fruit harvested green and after-ripened in storage are less sweet.
